Going Gluten Free

A Blonde's View [on gluten-free eating]




I think one of the biggest problems people have with gluten-free living isn't the idea (feel better! heathier! Lose weight!) or even the dedication- it's that they're uneducated. Most people don't know what gluten is or where it's found- therefore, they'll make common mistakes throughout their day, unknowingly throwing in gluten either in breakfast, lunch, or dinner.

The other issue is that people will tell me, tears welling in their eyes as they dream of pizza and croissants everything in between, is that it's impossibleBut I promise you, it's not.

I'll admit- I've done it too. Gluten, like I've stated before, can sneak up in everything, from soy sauce to dressings, to basically everything. I decided to share my meals from yesterday so give you a little guidance and ideas on what you can do, too!


Breakfast


A problem I hear a lot of my friends or newly-converted gluten is for the "most important meal of the day".... breakfast. Oatmeal, whole grain cereal, pancakes.... all these SO tasty meals are also SO full of gluten. But never fear! Not only are gluten-free pancake mixes available (in my Mother's Day post) for all you chefs out there, there are certainly naturally gluten-free options as well, as stated below:

yogurt is healthy, low-calorie, and all gluten-free!

Chex is just one of the tasty and naturally gluten-free options available for cereal!

Lunch:


Lunch is where it gets tricky. Although there's tons of bad-for-you gluten-free choices now (like pizza!) I was healthy yesterday heated up some soups. I'm no chef, I'll definitely admit that! I threw in a salad mix I bought from Costco I believe? As long as you stay away from the pasta, there's a wide variety too choose some. I chose a vegetable/potato mix! 






Dinner:


Like I said, gotta work on that beach bod! I had a salad with some chicken breast and basically whatever was in my fridge! Found some artichoke hearts, craisins, goat cheese, chick peas, and a homemade vinaigrette (super easy to make!




After Dinner Snack:


Who said gluten-free was no fun! I caught up on some old bachelorette episodes (do ya'll like Andi's season? I'm a little mixed but I think so!!) and had some popcorn (naturally gluten-free, whooo!) and some red wine.
